The 30 Minute Best Creamy White Bean Chicken Chili

  • 2 Tbsp Olive Oil
  • 2 Medium Onion,chopped
  • 4 Cloves Garlic,minced
  • 1 Cup Lima / Cannellini Beans/ Lima Beans / White Beans(canned)
  • 1.5 Cup Shredded Chicken
  • As per need Salt
  • 4 Ounce Can of Chili Peppers,chopped(Mild or Hot) / Seeded and Chopped 1 Jalapeno and 1 Anaheim Pepper
  • 1/2 tsp Oregano,dried
  • 1 tsp Cayenne Pepper
  • 1/2 tsp Smoked Paprika
  • 1 Tbsp Cumin,ground
  • 1/2 Tbsp Coriander,ground
  • 1 Tbsp Lime Juice
  • 4 Cup Chicken Broth,unsalted
  • 1/3 Cup Heavy  Cream,room temperature
  • 1/2 Cup Monterey Jack + Cheddar,shredded
To Serve:
  • Cilantro,chopped
  • Lime Wedges
  • Sour Cream


  1. In a dutch oven / soup pot,add olive oil.
  2. When its hot,add onion and garlic.Saute this till onion is soft.
  3. Add chopped chili(from can or freshly chopped).Saute further.
  4. Add the spices mentioned and saute.
  5. Next add drained beans(wash them once) and chicken shredded.
  6. Next add chicken broth,mix well and let it simmer for 15 mins.
  7. Reduce the heat and add cream and cheese mix.
  8. Let it simmer for the next 10 to 15 mins.
  9. Do not Boil it,let it simmer.
  10. Serve with cilantro,lime wedges and sour cream.


Use store bought rotisserie chicken and shred it to use in the recipe.
You can optionally add the chicken breast in the chili and add stock,let it boil and later shred it in the pot itself OR you can separately boil the chicken breast and shred it to be added to the chili.
You can also shred chicken with hand mixer or stand mixer.
Use the chili fresh ones or canned ones as per heat tolerance. I have used mild heat chili in the recipe.
If you are using fresh chili then preferable use the combination of Jalapeno and Anaheim ,seeded and chopped well.
Use smoked paprika and cayenne as per your heat/spice tolerance too.
After adding the stock let the chili boil till the beans and chicken with chili is cooked very soft and stock is reduced. Next add the cream by reducing the flame to sim and let it simmer after adding cream.
